Hmmm, would it be ezjails responsibility to find and execute the correct portsnap path?

AFAIR cron sanitizes the path for security reasons. You could try portsnap et al. at the standard locations (/usr/bin, /usr/local/bin, ...), but nobody says your binaries have to be installed there. Some test for the binaries along with errors messages, e.g. "Could not locate portsnap in $PATH" would be nice, though.
